SUNDAY CHEF

Ginger Beef Tips

Fire up the grill. This week’s Sunday Chef recipe combines tender ginger-marinated beef, grilled mushrooms and red onion, and a crisp spicy slaw.

And just like every Sunday Chef recipe, we’ve cleaned up the ingredients — no 12 Bad Foods needed.

Ingredients

  • 2 lbs beef sirloin or stew meat, cut into 1½-inch pieces
  • 1 large red onion, cut into grilling-size pieces
  • 8 oz whole mushrooms
  • 3 tablespoons coconut aminos
  • 2 tablespoons fresh lime juice
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon raw honey
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 8 grilling skewers

For the Spicy Slaw

  • 1 12-oz bag plain coleslaw mix — check the ingredients for no added oils
  • ½ cup plain Greek yogurt
  • 1 tablespoon coconut aminos
  • 1 tablespoon fresh lime juice
  • 1 teaspoon raw honey
  • ½ teaspoon freshly grated ginger
  • ¼–½ teaspoon crushed red pepper, depending on how much heat you like
  • Sea salt and black pepper to taste

Directions

1. Mix the coconut aminos, lime juice, ginger, garlic, honey, salt and pepper. Add the beef and allow it to marinate in the refrigerator for at least 30 minutes.

2. While the beef marinates, combine all of the spicy slaw ingredients and refrigerate until serving.

3. Thread the beef, red onion and mushrooms onto skewers, alternating the ingredients.

4. Preheat your grill to medium-high heat. Grill the skewers for approximately 5–7 minutes per side, turning as needed, until the beef reaches your preferred doneness and the vegetables are nicely charred.

5. Serve the hot ginger beef skewers over a generous helping of the cold spicy slaw.

Sunday Chef Tip
You don't need a bottle of oil to make great food.

Fresh ginger, garlic, citrus, herbs and spices can create incredible flavor without relying on bottled oils and heavily processed dressings and marinades.

Good food doesn't have to be complicated. It just starts with better ingredients.
